I have tried sprouting mung beans, but unsuccessfully as I only left them for one day in water and they never sprouted after that.
Do I need to soak the beans then cook them before they sprout?

Actually, mung beans are probably not the easiest sprout to begin with.. if you do want to grow them what you do is as follows:

Wash the dry beans first (run them through cold water until they run clear)

Leave them to soak in a bowl of cold water for about 12 hours

Remove them from the water and then put them into a sprouter (either a plastic tray sprouter or a sprouting jar). The sprouter or bean jar doesn't need to be in the light, in fact they do slightly better in the dark.

Water them and allow the water to drain - twice a day. (it's like rinsing them really)

The sprouts should start appearing after 2-3 days. Pick off the seeds that aren't growing otherwise they'll start growing mould.

And voila, fresh, healthy enzyme packed sprouts!

Actually, I'm gonna try and set up a sprout blog soon! And take some pictures so that people can see how it all works.. :-)
